Chartwells’ Dining specializes in serving catered events, from the small coffee get together to the full banquet.

  For your convenience, we have put together frequently requested and popular menu items in this brochure.  These menu items are just a sampling of what we can offer. Let us suggest menu selections and service style.  We are more than happy to work with you, and develop a catering menu specifically designed to meet your needs.

Catering Policies 

Welcome to Saint Mary’s University! This guide details the functions and capabilities of the Food Service Catering Department at Saint Mary’s University. The complete range of service is not limited to the selections listed in this manual. We will meet all the unique needs of each individual group. Let us tailor a menu to suit your theme or occasion!

 Placing a Catering Order

Please follow the guidelines below when placing a catering order. If you need additional information, call the Catering Office at 507-457-1655. Our staff is pleased to participate in the coordination and planning of your event.

Room Reservations

Room reservations for the Saint Mary’s Campus are made through the Toner Center. A variety of table-and-chair setups are available. Please call 507-457-1586 to confirm a room reservation prior to contacting the Catering Services.  Room reservations for the Saint Theresa Campus may be made by calling 507-453-5552

Guidelines

Please give us the time we need to prepare for your event. In order to accommodate  your needs, a sufficient amount of time is requested.

Orders for refreshment breaks should be placed with the Catering Office five (5) business days before the event. Orders for meals and receptions should be placed no less than ten (10) working days before the event. Your menu must be finalized five (5) business days prior to the function.

Arrangements made within two days of an event will require an additional surcharge of 10% and may result in limited food selections.

 

Billing Details
University Sponsored Events, please sign and return the Catering Contract to the Dining Services office 24 hours in advance (fax 507-457-1657). If you are billing to a University Account, Dining Services must receive the number and a signed contract before the day of the event.
 
General Catering Events
Checks, cash or an authorized purchase order may be used to pay for your catered event. Non-University sponsored groups will be requested to provide a 50% deposit one week prior to the event. An invoice for the remaining balance will be provided to you at the conclusion of your event, with payment in full required at that time.
 
Sales Tax (currently 6 1/2% for food and 9% for liquor) will be added to all catering.

Catering Policies Continued…

 

Health Regulations prohibit leftovers to be taken after a catered event. Please leave all catering equipment in the room of the event.  

Delivery Fees

On Campus. There is no delivery charge for events delivered to on-campus facilities totaling $25.00 or more. A delivery charge of $10.00 will be applied to orders under $25.00. For meal service with china and linen outside the Toner Center, set fees may apply

Off Campus. For deliveries off-campus there is a minimum order of $100.00. The delivery charge will be calculated on the size and distance of the event. Arrangements may also be made to pick up an order at the Dining Services Office in the Toner Center. 

Guarantees & Minimums

You will be billed on the basis of a guaranteed minimum number unless the guests present exceed the guaranteed number. Food and Beverages must be provided by Chartwells Dining Service. Arrangements for banquets must be confirmed, changed or cancelled five (5) business days in advance.  No tipping is required. 

Overrun Charges

One and one-half hours of service are normally provided for catering meals. If there is to be a program during the meal, please notify the Catering Office when making service arrangements. If service needs are beyond the maximum service hours, there will be a $10.00 per hour, per-attendant service charge.

Linen Tablecloths and Napkins are available for any function that does not include food. There is a charge of $.35 per linen napkin with many colors available with advance notice. A charge of $3.00 per tablecloth will be applied if delivery and set-up are required.  Pickup from the Dining Services office will be charged at the rate of $2.25 per table cover. There is a charge of $10.00 per cloth if not returned.

Additional Table Drapes may be requested. A charge of $15.00 will be applied for each table covered and draped.

Water Setup is available for conferences, lectures and meetings at $.50 per person. There is a minimum service charge of $5.00.

Décor and Special Effects may be used to enhance your function. Prices available upon request.

Our Chilled Luncheon Specials can be served at a buffet or on individual plates and includes rolls, coffee, tea or milk.

Hawaiian Chicken Salad… A composition of chicken, fresh pineapple, grapes and nuts combined for a refreshingly Hawaiian taste. 

Chef Salad Luncheon Special (served)

Chef Salad… Crisp tossed greens with julienne cuts of turkey and ham with Swiss and American cheeses. 

Herb Breast of Chicken Salad Luncheon Special (served)

Herb Breast of Chicken Salad… Marinated chicken breast served over fresh greens with an accompaniment of fresh vegetables

Chilled Fruit Platter… Fresh melons and berries along with home baked Artesian-style bread and assorted cheese wedges with your choice of cottage cheese or yogurt.  

French Style Croissant Luncheon Special (served)

French Style Croissants… Chicken, tuna, or ham salad served on croissants.  Prepared from fresh ingredients with a mayonnaise base.  Served with lettuce and tomato. 

Deli Sandwich Buffet

Choice of smoked turkey, honey glazed ham, genoa salami, roast beef.  Assortment of domestic cheese slices and freshly baked bread.  Lettuce, tomato and red onion slices along with dill pickles, chef’s salad of the day, potato chips, basket of whole fresh fruit, fresh baked cookies or bars, coffee, tea or milk. 

Deli Board Luncheon Buffet

Assorted cold cuts, assorted cheeses, fresh rolls or croissants, lettuce, tomato, onion and choice of one salad.

Tortilla Roll-Up Buffet

Turkey and ham, served with lettuce, onions, tomatoes, cream cheese with assorted flavored flour tortillas, chef’s choice salad, potato chips, basket of fresh whole fruit, choice of desert, coffee, tea or milk

Executive Salad Special

Fresh garden greens, grilled swordfish served with a fresh Kaiser roll and specialty soups.  Choice of dessert, coffee, tea or milk

Baked Potato Buffet

Fresh grilled bacon bits, homemade chili, steamed broccoli florets and conqueso sauce.   Baked potato, assorted vegetable toppings, sour cream, shredded cheddar cheese, basket of fresh whole fresh fruit, choice of dessert, coffee, tea or milk. 

Open Face Roast Beef or Turkey Sandwich

Fresh carved roast beef or turkey served with home-style gravy and choice potato. 

Hearty Homemade Chili

Served in a fresh baked bread bowl topped with sharp cheddar cheese.  

Chicken or Beef Stir Fry

Tender chicken breast or top round and fresh oriental vegetables served with rice. 

Grilled Top Round or Beef Primavera

Marinated top round steaks grilled with seasonal vegetables. 

Pecan Chicken

Cozy chicken breast breaded with fresh breadcrumbs and chopped pecans topped with a light honey glaze. 

Creole Pork

Julienne pork loin with tomato, onion, peppers and mushrooms in a slightly spicy sauce. 

Baked Lasagna (Meat and Vegetable)

Your choice of rich noodles in a red sauce with ground beef and a variety of Italian cheeses makes up our meat lasagna. Fresh vegetables in a cream sauce with Parmesan cheese complete the vegetable lasagna. 

Penne Pasta with Grilled Fresh Vegetable

A hearty portion of penne pasta served with fresh grilled vegetables and chunky tomato sauce. 

Bagged Lunches 

The Fresh Club

Ham and turkey with lettuce, tomato, onion and Swiss and American cheese. Also comes with chips, fresh fruit, cookie and a beverage. 

Trio Salad Box Lunch

A choice of chicken or tuna salad, pasta salad, and fresh fruit salad. With a fresh roll, a wedge of cheddar cheese, brownie and a choice of beverage.

Stuffed Chicken Breast New Hampshire

A 6 ounce chicken breast stuffed with ham and fresh parsley, breaded with fresh breadcrumbs and walnuts served with garlic white wine sauce. 

Roast Pork Loin with Rosemary Au Jus

Seasoned and slowly roasted, sliced and served.

 

Roast Sirloin of Beef with Madeira Sauce

Choice New York strip roasted whole and sliced.

 Served with a rich mushroom and Madeira sauce. 

Medallions of Beef Tenderloin

A  whole tenderloin slow roasted and served with a rich brown sauce.

Marinated in tropical fruit juices and accompanied with a fresh cilantro pineapple salsa 

Salmon En Croute

Salmon filet seasoned with lemon and dill then wrapped in puff pastry

 and baked until golden brown. Served with hollandaise sauce.

Chicken baked to perfection and lightly seasoned with herbs and spices.

Roast Turkey Dinner

Tender, juicy breast of turkey with old fashioned stuffing served with pan gravy. 

Roast Pork Loin With Apple Chutney

A whole pork loin seasoned and slow roasted and served with slightly sweet and sour apple chutney. 

Sole With Fresh Salsa

Sole filets baked with fresh herbs served with tomato and cilantro salsa.

Bar Service

Bar Service Options

Host Bar

A tally of drinks consumed by guests is kept, and the client contracting the event is billed. 

Cash Bar

Guests pay cash for their drinks. 

Premium Bar

Include premium liquors, domestic and imported beer, house and domestic wine, assortment of soda, mixes, and cocktail napkins. 

Bar Services Policies

Alcoholic beverages are allowed only in the room in which they are being served. 

The client and or organizers of the sponsoring group where alcoholic beverages are being served will be primarily responsible for the decorum of the event. 

Bar Service Expenses

A charge of $60.00 will be added for each bartender (4 hours).  We will waive this charge for each $300.00 in bar sales.
